I came back to my home store and took on a handful of responsibilities that fall outside of my position as a server, including but not limited to: teaching an 8 hour wine intensive for all Houston area new hires, setting new standards of service in my home store, helping curate the wine list by communicating with management on whats selling and what guests are regularly requesting, and keeping the appearance and the overall atmosphere of Max's up to higher standards than those set by our in and out of house management.

After being at Max's for 4 years, my general manager took a job with Peska to help guide their business back on track. As soon as he told me he was taking the job, in the same breath he asked me to come with him. I was excited to see the business from the administrative side, and was promised the world by ownership in the interview process. We knew coming in that it wouldn't be easy, but we didn't truly understand the financial predicament the business was in until we began receiving phone calls from purveyors about  accounts payable that had gone unresolved for nearly a year. I genuinely enjoyed getting to be hands on with staff training, and getting to work with reps on bringing new products in to build a more profitable menu, but when the business has been bleeding $90k a month for a solid fiscal year, turning the business around was a tall order. We delivered Peska's first profitable month in a year and a half in August, but after Harvey all of our buzz and momentum seemed to disappear. After having intimate conversations with the ownership I realized the business wouldn't survive through December and decided to go back to Max's. 

While I was there I was able to bring LBW cost from 38% down to 22%, and bring our avg. labor cost from 27% down to 19%.
